Chiso is great. Excellent sushi, excellent service and wonderful atmosphere. Only quibble might be that it’s a little expensive, but I think the quality more than makes up for the cost.

Excellent sushi, fabulous cooked food as well. Wonderful waitstaff, grea unique mixed drinks, and the best dining music in town.

This is one of my favorite sushi places in Seattle. The sushi here is really well priced for the great quality you get, and their menu is very traditional, with some more obscure ingredients like ume and kampyo, and steering away from the ridiculous thirteen-ingredient rolls that seem to be popping up around Seattle. (Have you ever tried to get a mushy hockey puck into your mouth? It's so unnecessary.)

While they have a nice sake list, I'd recommend instead checking out their truly remarkable original cocktails, many of which seem to have been constructed to complement the food, rather than just as an apéritif.

The fish is always in good shape, and they have a great seasonal menu — I recommend asking your waiter what some of the items are if you don't recognize the names!

Finally, while I haven't partaken in it yet myself, the fact that there is an option for an omakase dinner here endears this place to me — it's definitely on my to-do list, but probably not before I've gone back for dinner a few more times…
